You are now able to easily repeat a task on weekdays by selecting "Weekdays" from the "Repeats:" dropdown menu!

i see there's a daily option, now just need to omit weekend days

Until we implement a shortcut, you can select a repeating frequency of "Weekly" and then selecting all of the weekdays:
